Cooking Halibut with ginger gives it a wonderful Asian twist, only added to by the flavor of the rich alder plank.
First: Soak the grilling plank in water for 1-8 hours; the longer the better. We used an alder grilling plank; you use cedar to make cedar-planked halibut.
Next Preheat grill to 375-400°. Mix the coconut oil and sesame oil together. Rub both sides of Halibut with salt, pepper and the oil mixture. Slice ginger and place on plank. Place seasoned Halibut Steaks on the plank; add plank to grill.
Close the grill lid and allow the plank to smoke and smolder- that’s where the smoky flavor comes from. The alder wood flavor comes from the water vapor released from the plank during the grilling process, which also helps keep the fish moist.
