Tangy Citrus Ginger Kabobs

Tangy Citrus Ginger Kabobs

Serve on a bed of rice, with a side salad topped with Litehouse® Tangy Orange Citrus Vinaigrette and garnished with almonds.





2 boneless, skinless chicken breasts
1 cup fresh pineapple, cubed (or 1 can pineapples chunks)
Additions: Mushrooms (halved)
Green or red peppers (cut in 1” chunks)
Onion (cut in 1” chunks)
13 oz. Litehouse® Tangy Orange Citrus  Vinaigrette or,
Litehouse® Sesame Ginger 


Cut chicken breasts into 1-2” chunks. Put in zip lock bag and add enough Litehouse® Tangy Orange Citrus Vinaigrette to cover (1/2-3/4 cup). Close bag and squish around. Let marinate ½ hour. Cut veggies. Alternate pieces of chicken and pineapple, using 4 skewers. Create additional skewers using the cut veggies. (Because the cooking time is longer for the chicken, the veggies tend to burn if combined on the same skewer). Grill over medium heat 8-10 minutes. Baste with additional Litehouse® Tangy Orange Citrus Vinaigrette. Check for doneness and grill a few minutes more if needed. Serve alongside rice and fresh spring mix salad with Tangy Orange Citrus Vinaigrette.
