1 qt.+ 4oz Litehouse Pear Gorgonzola Dressing
2 each Bartlett Pear, cored and sliced ¼
8 Pork Loin cutlets, cut 2oz each
4oz Gorgonzola crumbles
12oz (approx.) Arugula
4 each Rich’s Rustique Par Baked Roll
Wash Hands. Portion cutlets into a bowl and cover with 1qt of Litehouse Pear Gorgonzola Dressing; letting it marinate overnight.
Day 2. Wash Hands – Core and slice pears, lightly spray with LBA. Turn on Grill to High setting 400 degrees or so; place sliced pears and marinated pork cutlets on the grill, cook on each side approx. 2 minutes or until nice grill marks are achieved. Set aside.
Par- bake the Rustique Roll (toast on the top rack of the grill or on the cooler side to add crispiness). Make Pear Gorgonzola spread by mixing the Litehouse dressing with mayonnaise. Lightly season with salt and pepper to taste.
Spread a light crumble of Gorgonzola on the bottom piece of roll on the plate. Follow with two pieces of grilled pork, top that with the Arugula. On the top piece of bread, spread liberally the Pear Gorgonzola Mayo and layer 3-4 slices of the grilled pear.
Lay side by side for plate presentation, or place together (as pictured) and serve. Serving side suggested (per picture), fresh cut vegetables with Litehouse Signature Red Raspberry Vinaigrette.
