Mediterranean Deli Salad


1 cucumber, peeled
1 green pepper, coarsely chopped
l tomato, sliced into wedges
½ red onion, thinly sliced
1 heart of iceberg lettuce, chopped
1/2 cup kalamata olives
¼ cup chopped flatleaf parsley
½-3/4 cup Litehouse Red Wine Olive Oil
1/2 cup Litehouse Feta Cheese


Quarter the cucumber lengthwise. Slice each quarter into ½ inch pieces. Toss the cucumber, pepper, tomato, onion, olives, lettuce and parsley together. Toss with dressing; top with feta cheese and serve.
