Mediterranean Caesar Salad

Caesar was of Rome – so why wasn’t this his salad? Vitamin rich Kale, and romaine team up to carry LH OPA Caesar, feta cheese, olives and fresh made seasoned croutons – spritz a lemon and va-voom… feel the sea breezes

Ingredients

4 leaves of a head of romaine
4 leaves of Kale
8 each mixed olives – 4 whole, 4 chopped
2 oz crumbled feta
A wedge of lemon
Croutons: Fresh Made –
1 loaf of day old bread – large cubed
8oz butter
½ cup olive oil
1 Tbsp IF Oregano
1 Tbsp IF Basil
1Tbsp IF Garlic
Heavy salt and pepper

Directions

To make the croutons: heavy gauged pan (cast iron) – place the butter and olive oil, drop in the bread, toss in the herbs and seasonings and let it toast/sauté – move the bread cubes around to get even coating – set aside to cool
Cut the leaves of the greens into rough 1” pieces
In a bowl toss them with chopped olives, and LH OPA Caesar Dressing
Plate and then top with Feta cheese, lemon wedge “spritzer” and strategically placed over sized seasoned croutons – garnish with a few more olives and some fresh dill sprigs
