Killer Noodle Salad

Ingredients

6 oz. linguine or very thin spaghetti
2 c. cooked chicken, cut in strips
1 medium cucumber, seeded and sliced
1 c. fresh peapods, bias cut ½”
4 green onion, sliced ½”
1 medium tomato
2 c. shredded napa cabbage
2 c. shredded spinach
1 cup Litehouse® Thai Peanut or,
Litehouse® Sesame Ginger or,
Litehouse® Tangy Orange Citrus 

Directions

Cook pasta al dente. Rinse in cold water. Combine pasta, chicken, cucumber, peapods, green onion and tomato. Pour dressing over. Toss gently. Cover and chill 4-24 hours, stirring 2-3 times.

To serve: Line dinner plates with cabbage and spinach. Top with chicken-linguine mixture. Sprinkle with peanuts.

Tip: Cook a little extra pasta on spaghetti night and reserve for this main dish salad.
