2 cups (peeled, cubed, and boiled) Idaho potatoes
1 cup LH Jalapeno Ranch
4 each egg yolks
2-2/12 cups of flour
½ cup of shredded cheddar
4oz of a block of cheddar, cut into 1/4oz cubes
1# package of fresh bacon
6oz LH Jalapeno Ranch for the sauce of one order

Cook the potatoes like you would to make mashed potatoes. When they are done, drain the water and set aside to cool (in the fridge works great)
Measure out the eggs, LH Jalapeno Dressing, cheese
Once the potatoes have cooled - add together with the egg, dressing and cheese mix
As the ingredients come together in the mixer, add in a cup of flour and again once that cup has been incorporated.
The mix will begin to resemble a bread dough – remove from the mixer and table it in an ample pile of flour, knead it out until the now “potato dough” can be portioned.
Each portion then receives a cube of cheese, rolled and then rolled with a half strip of bacon and picked.
Heat a deep fryer to 350 degrees and then place the croquette into the fryer – takes about 5 minutes.
