Jalapeno Cheddar Croquettes wrapped in Bacon

These little buggers may take some time – but they are worth the wait. Litehouse® Jalapeno Ranch makes the croquette standout as a flavor bomb, add in bacon and then toss ‘em in a deep fryer – wait for it – and MORE Jalapeno Ranch! Yes, please.


2 cups (peeled, cubed, and boiled) Idaho potatoes
1 cup Litehouse® Jalapeno Ranch
4 egg yolks
2-2/12 cups of flour
½ cup of shredded cheddar
4oz of a block of cheddar, cut into 1/4oz cubes
1lb. package of fresh bacon
Tooth picks
Fry Oil
6oz LH Jalapeno Ranch for each plate
Pickled jalapenos and fresh parsley for garnish


Cook the potatoes like you would to make mashed potatoes. When they are done, drain the water and set aside to cool (in the fridge works great) Measure out the eggs, Litehouse® Jalapeno Dressing, and cheese. Once the potatoes have cooled, add together with the egg, dressing and cheese mix As the ingredients come together in the mixer, add in a cup of flour and then add the other cup once the first cup has been incorporated. The mix will begin to resemble a bread dough – remove from the mixer and table it in an ample pile of flour, knead it out until the now “potato dough” can be portioned. Each portion then receives a cube of cheese, rolled and then wrapped with a half strip of bacon and picked. Heat a deep fryer to 350 degrees and then place the croquette into the fryer – takes about 5 minutes. Remove and let cool – Plate and serve 3 croquettes with 6oz. Litehouse® Jalapeno Ranch
