Baked Apples with Caramel

The aroma of apples baking brings back autumn memories of yesteryear. Make these easy, mouthwatering memories for your family tonight!

Ingredients

4 Medium apples
1/3 cup packed brown sugar
1/4 cup chopped walnuts
1/4 cup dried cranberries or raisins
Grated zest of half a lemon (optional)
1/2 tsp. cinnamonDash of nutmeg
1/4 cup Litehouse Apple Cider
4oz cup Litehouse Caramel Dip

Directions

Preheat oven to 350 F. Core apples from top, stopping one inch from bottom. Set in shallow 1 1/2 quart baking dish large enough to hold them without touching. Combine brown sugar, walnuts, cranberries, lemon zest, cinnamon and nutmeg. Spoon into apples, scattering remaining into baking dish. Dot apples with 1 tsp butter. Pour cider into pan. Cover tightly. Bake 30 minutes. Uncover and baste. Bake 10 additional minutes, until tender but not mushy. Heat caramel dip in microwave for 1 minute on high; stir and heat another 10 seconds. Top with a scoop of vanilla ice cream; spoon caramel over hot apples, serve and enjoy!
