Baked Ranch Potato Salad

Ingredients

2 slices bacon, cooked and crumbled
1½ lbs. red potatoes, baked
1 cup cheddar cheese, shredded
½ Tbsp mustard
1 cup red bell pepper, chopped
1/4 cup celery, diced
1 Tbsp. Litehouse® Instantly Fresh Chives 
½ cup Litehouse® Homestyle Ranch or,

Directions

Cool baked potatoes and cut into 1 inch cubes. Combine ¾ cup shredded cheddar cheese, ½ cup Litehouse Homestyle Ranch dressing, mustard, red bell pepper, and celery. Sprinkle with bacon, chives, and remaining ¼ cup of cheese.

Chicken Caesar Pasta Salad

This pasta salad is super simple to make and always gets rave reviews.

Ingredients

1 pkg. bowtie pasta
1 pkg. pre-cooked chicken breasts, diced
1 cup celery, sliced
1/4 cup green onion (including the green tails), sliced
1 8 oz. pkg. frozen peas (optional)
Grated fresh Parmesan Cheese
Romaine leaves
1 1/2 cup Litehouse® Caesar Caesar or
Litehouse® Lite Caesar

Directions

Cook pasta according to package instructions. Drain. Add chicken, celery, onion and frozen peas (thawed). Toss with dressing. Grate Parmesan cheese on top and stir gently to blend. Serve on romaine leaves, or as a potluck salad.

Brussels Sprouts & Apple Salad

This is the perfect side dish to compliment any entree.

Ingredients

12 oz Brussels Sprouts

1 small Gala or Fuji apple, diced

2 Tbsp. Sliced almonds (optional)

1 tsp. Instantly Fresh Thyme, finely chopped

Salt & pepper to taste

1/2 cup Litehouse® Balsamic Vinaigrette or,

Litehouse® Fuji Apple Vinaigrette  

Directions

Steam brussels sprouts for in the bag for 3 minutes, or until tender. Once cooled, cut each brussels sprout in half. In a medium size bowl, combine apples, almonds, Litehouse Instantly Fresh Thyme and balsamic dressing with halved brussels sprouts, mixing thoroughly. Serve and enjoy!

Oh-So-Simple Cedar-Planked Peaches

Personal sized Cedar grilling planks, also called Cedar 4 x7's are great for this recipe. Small, convenient to soak, perfect for 4-8 oz. cuts of meat or fish, they fit in any purse, and they don't break the bank.

Ingredients

7 x 4 Outdoor Gourmet Cedar Grilling Planks, soaked for 1-8 hours; the longer the better!
- a couple ripe peaches
- fresh sage and thyme, or your favorite fresh herbs.

Directions

First- Soak 7 x 4" Cedar Grilling Planks for 1-8 hours. Pre-heat the grill to medium-high (350°).
Then- Slice peaches in half, remove pit and rough chop herbs.
Next- Place cedar planks on grill with peaches sliced-side-up and sprinkle with herbs. Close lid of grill then allow to smoke and smolder for 11-14 minutes.
Finally- Carefully remove from grill and enjoy as a side dish, over a salad or just as is! It’s just that easy.

Maple Planked Brie Topped with Chanterelle Tapenade

What could be a better gourmet side dish than wild mushrooms and cheese grilled on a plank? 

Ingredients

1 round of brie or camembert (preparation instructions above)
1 c. dehydrated wild mushrooms
3 TBS. of butter
1 c. red wine
2 clove minced garlic
olive oil and balsamic vinegar

Directions

1. Soak mushrooms in red wine until rehydrated- an hour or more.
2. Heat pan to medium high heat, add butter, rehydrated mushrooms, and whatever wine the mushrooms did not absorb. Sauté for 7-8 minutes, then add minced garlic.
3. Remove from heat and place mushroom garlic minute in a food processor for a quick rough chop or just do this with a knife and cutting board.
4. Drizzle olive oil and vinegar, and salt and pepper to taste. Top cheese with mushroom tapenade and presto! Serve with bread, crostinis, or crackers and enjoy!

Grilled Asparagus

Asparagus is a seasonal treat that when cooked on a plank gains a delicious smoky flavor that can’t be gained any other way. 

Ingredients

1: 11.75" x 5.25" Outdoor Gourmet Grilling Plank. Soaked in water for 2-8 hours before using.
1 bunch of fresh asparagus
Juice of 2 fresh lemons (approx. 3-4 tablespoons)
1 tsp. fresh lemon zest
3-4 TBS. extra virgin olive oil
Coarsely ground salt and pepper

Directions

First: Wash and trim asparagus. Mix lemon juice and olive oil. In a shallow pan or bowl, toss asparagus gently with lemon juice and olive oil to coat.
Second: Arrange asparagus spears in one layer on wet plank. Apply ground, coarse salt and pepper to taste.
Then: Place plank on medium heat grill. Close lid and cook for about 10 min. or until crisp and tender. Check every few minutes. If flare-ups occur douse flames with spray water bottle.
Finally: When done cooking, remove from heat and sprinkle with fresh lemon zest. Serve from plank or from a serving platter.

Apple & Blue Cheese Slaw

This crunchy side dish makes a wonderful accompaniment to pork.

Ingredients

2 sweet red apples, sliced and peeled
¼ cup fresh lime juice
½ cup shredded green cabbage
½ cup shredded red cabbage
1 cup Litehouse® Blue Cheese Dressing & Dip
¼ cup blue cheese crumbles
1 Tbsp. grated sweet onion
1 Tbsp. red wine vinegar
 

Directions

Dip apple slices in lime juice and combine the green and red cabbage in medium bowl. Mix dressing, onion, and vinegar in small bowl. Pour half of dressing over salad and toss in cheese. Add more dressing as desired. Serve chilled.
