Baked Asparagus with Blue Cheese Crumbles

Once you've tried this easy, elegant dish, you'll never just boil asparagus again!

Ingredients

1 pound asparagus, bottoms trimmed
3 Tbsp. extra virgin olive oil
Salt and freshly ground pepper to taste
2 oz. Litehouse® Blue Cheese Crumbles 
2 tsp Litehouse® Instantly Fresh Garlic 
4 tsp. Litehouse® Instantly Fresh Parsley

 

Directions

Pre-heat oven to 400 F. Wash asparagus; cut off and discard tough ends. Place asparagus tightly together in a baking pan. Sprinkle with herbs, salt, pepper and oil. Bake uncovered until asparagus is firm to the bite, 12-15 minutes. Remove from oven; garnish with cheese and serve.

Roasted Balsamic Veggies

Ingredients

8 oz. fresh green beans or asparagus, cut in 3" lengths
1 onion, cut vertically in thin wedges
2 medium zucchini or yellow summer squash, halve lengthwise and sliced 1/4"
1/2 c. Litehouse® Balsamic Vinaigrette or,
Litehouse® Organic Balsamic Vinaigrette 

Directions

Preheat oven to 450 degrees. Toss beans and onion with Litehouse® Balsamic Vinaigrette. Place in roasting pan and roast for 8 minutes. Stir in squash and roast 8 minutes more.

Delicious Fruit Salad

A delicious and easy side dish for baked ham or grilled chicken.

Ingredients

2 cups cantaloupe, diced
1 1/2 cups fresh pineapple, diced
1 1/2 cups strawberries, sliced
1 cup seedless grapes, halved
1 banana, sliced
1/2 cup vanilla yogurt (Substitutions: mayonnaise or sour cream)
2/3-1/2 cup Litehouse® Pomegranate Blueberry Vinaigrette
Substitues Include:  Litehouse® Huckleberry Vinaigrette

Directions

Combine all fruit in large bowl. Mix Litehouse® Pomegranate Blueberry Vinaigrette and 1/2 cup vanilla yogurt. Add dressing and toss to coat. Refrigerate until cold, about one hour. Serve chilled. 4 Servings.

Butternut Squash Salad

It's true! There really IS more than one way to eat squash!

Ingredients

½ Roasted butternut squash
4 cups mixed greens
1 cup spicy pecans
¼ cup dried cranberries
½ cup Blue cheese crumbles
½ cup Litehouse® Raspberry Walnut Vinaigrette , or Litehouse® Pomegranate Blueberry Vinaigrette 

 

Directions

Cut squash in ½ lengthwise, remove seeds. Put in microwave 8 minutes, covered. Remove skin and cut into ½” cubes. Layer mixed greens, squash, spicy pecans, dried cranberries, and Litehouse Bleu Cheese crumbles. Pour over Litehouse Balsamic Vinaigrette.

Just Like Mom's Potato Salad

Ingredients

8 potatoes, boiled and skinned
4 eggs, hard boiled
1/4 cup sliced green onions (optional)
1/4 cup sliced celery (optional)
1/4 cup sweet pickle relish (optional) 
Salt & pepper to taste
1 jar Litehouse® Honey Mustard Dressing & Dip

Directions

Boil potatoes & eggs (I use the same pan and boil them together). Peel potatoes and cut into bite size chunks. Add onions & celery, if desired. Peel and chop eggs into mixing bowl. Add sweet pickle relish and 1 jar Litehouse® Honey Mustard Dressing & Dip. Fold together to combine. Mix gently with potatoes. Refrigerate.

2 cups grated cauliflower
1 cup grated carrots
1 cup shredded red cabbage
2 chopped green onions

Double Sesame Seed Slaw

Beyond food themes, I like to honor the ingredients in recipes with herbs, dressings, and marinades that echo the flavors, textures, and character of various foods. For example, in the Double Sesame Seed Slaw, Napa cabbage, snow peas, and black sesame seeds merit a dressing and seasonings that compliment the textures and tastes of those foods.

Ingredients

4 cups Napa cabbage, shredded
½ cup snow peas, diced 
½ cup carrots, diced
2 tablespoons black sesame seeds
1 tablespoon brown sugar
2 tablespoons Litehouse® Instantly Fresh Spring Onion
2 tablespoons Litehouse® Instantly Fresh Salad Herb Blend
½ cup plus 1 tablespoon Litehouse® Sesame Ginger

Directions

Pour Litehouse® Toasted Sesame Ginger Dressing into large serving bowl. Add cabbage, snow peas, carrots, and freeze-dried herbs.
 
Toss salad with a wooden or silicon spoon, and mix ingredients thoroughly. Add brown sugar and continue mixing gently.  Garnish coleslaw with black sesame seeds.
 
Refrigerate for 30 minutes or more before serving.

Pink Lady Apple & Jicama Slaw

The recipe for Pink Lady Apple and Jicama Slaw was developed for a New York themed party for a friend who is moving there. Litehouse’s “Fuji Apple Vinaigrette” is light, creamy and perfect for coleslaw that includes fruit. The slightly tart “Pink Lady” apples and the mild flavor of jicama are accented and heightened. The freeze-dried cilantro adds a sweet finish to the slaw.

Ingredients

3 tablespoons fresh lemon juice
2 cups Pink Lady apples, diced (about 2 large apples)
4 cups shredded green cabbage
1 cup shredded red cabbage
1 cup jicama, julienned 
¾ cup Litehouse® Fuji Apple Vinaigrette 
2 tablespoons Litehouse® Instantly Fresh Cilantro 
1 teaspoon sugar
Cilantro leaves for garnishing

Directions

Pour squeeze lemon juice over diced apples and set aside. Put both cabbage ingredients and the jicama to a large serving bowl.
 
Drain lemon juice from apples and add apples to the serving bowl. Add Litehouse® Fuji Apple Vinaigrette Dressing along with Instantly Fresh Cilantro.
 
Toss salad with a wooden or silicon spoon, and mix ingredients thoroughly. Add sugar and continue mixing gently.
 
Refrigerate for 30 minutes or more before serving.

Fuji Apple Broccoli Slaw

This slaw combines the tart flavor of apples with the crunch of sweet glazed almonds atop a broccoli slaw. It is a perfect side dish to complement any meal.

Ingredients

1 package of MANN'S® Broccoli Coleslaw
¾ cup golden raisins
¾ cup glazed walnuts
1 cup chopped apples, cored but not peeled
½ cup Litehouse® Blue Cheese Crumbles 
1 cup Litehouse® Fuji Apple Vinaigrette 

Directions

In a large bowl, mix broccoli slaw, golden raisins, glazed walnuts, chopped apples and blue cheese. Pour Fuji Apple dressing over top and slowly mix until all ingredients are coated evenly. Serve immediately or store in the refrigerator.

Broccoli Waldorf Salad

This salad is very colorful, and as easy to prepare as it is to eat!

Ingredients

6 cup broccoli florets
1 large red apple, chopped
1/2 cup raisins
1/4 cup chopped pecans
1/2 cup Litehouse® Coleslaw or Litehouse® Fuji Apple Vinaigrette

Directions

Combine the first four ingredients in a large serving bowl. Drizzle with Litehouse Coleslaw Dressing; toss to coat.
Note: Broccoli can be blanched first. Bring pot of water to boil; submerge broccoli for 1 minute. Drain and immerse in cold water immediately to chill.
