Grilled Turkey with Mixed Greens

Grilled Turkey with Mixed Greens

A delicious recipe which you can customize to fresh grilling or using leftovers.

Ingredients

10 oz. Spring Mix or Euro Mix Greens
1 cup blueberries, washed
1/2 cup sliced almonds (plain, butter toffee or honey glazed)
1 lb Turkey breast (or 2 cups cooked turkey, sliced or cut)
1 cup Litehouse® Pomegranate Blueberry Vinaigrette  (substitute: Litehouse® Raspberry Walnut Vinaigrette  or Litehouse® Huckleberry Vinaigrette )

Directions

Place uncooked turkey breast in zip lock bag. Add 1/2 cup Litehouse vinaigrette. Seal and let marinate 1/2-1 hour. Cook turkey by grilling or baking (approximately 10 minutes. ) Let rest 3-5 minutes (If using cooked turkey you can eliminate this step.) Place greens in a serving bowl. Top with sliced turkey, blueberries and almonds. Drizzle with 1/2 cup Litehouse vinaigrette of choice.

Butternut Squash Salad

It's true! There really IS more than one way to eat squash!

Ingredients

½ Roasted butternut squash
4 cups mixed greens
1 cup spicy pecans
¼ cup dried cranberries
½ cup Blue cheese crumbles
½ cup Litehouse® Raspberry Walnut Vinaigrette , or Litehouse® Pomegranate Blueberry Vinaigrette 

 

Directions

Cut squash in ½ lengthwise, remove seeds. Put in microwave 8 minutes, covered. Remove skin and cut into ½” cubes. Layer mixed greens, squash, spicy pecans, dried cranberries, and Litehouse Bleu Cheese crumbles. Pour over Litehouse Balsamic Vinaigrette.

A refreshing spring salad!

Ingredients

1 pkg. (6 oz.) spring mix salad
3/4 cup fresh strawberries, quartered
1/3 cup golden raisins
1 large avocado, sliced
1/3 cup Blue cheese crumbles
1/4-1/2 cup Litehouse Raspberry Walnut Vinaigrette

Directions

In a medium bowl, toss together the spring mix, strawberries, walnuts, and golden raisins. Top with avocado and bleu cheese crumbles. Drizzle lightly with Litehouse dressing just prior to serving and pass dressing with salad.

Spinach-Pear Salad with Warm Vinaigrette

What a wonderful combination bleu cheese and pears make. It brings to mind crisp autumn harvest days.

Ingredients

1 16 oz. bag fresh spinach leaves
1/4 red onion, thinly sliced
2 Tbsp Litehouse® Blue Cheese Crumbles 
1 large ripe fresh pear, diced
1/4 cup Litehouse® White Balsamic or,
Litehouse® Pear Gorgonzola 

Directions

Wash spinach leaves and dry thoroughly. Transfer to large bowl; sprinkle with onion and cheese. Add pear slices. In small saucepan, heat dressing to just warm, but not to a boil. Immediately pour over salad and toss until evenly dressed. Season with salt and pepper. Serve immediately.

Chicken, Red Potato, and Green Bean Salad

A wonderful summer side for any occasion!

Ingredients

1 lb. small red potatoes steamed
½ lb. diagonally cut green beans
8 oz. cubed cooked chicken 
10 oz. salad greens 
Tomato slices, garnish
1 Tbsp. Red Onion, chopped
½ cup Litehouse® Lite Honey Dijon Vinaigrette, or Litehouse® Zesty Italian Vinaigrette

 

Directions

Quarter potatoes and steam over water 10-15 minutes. Add beans, and cook an additional 5-7 minutes or until beans are crisp-tender. Drain. Place the potatoes, beans, chicken, red onion, and greens in a large bowl. Drizzle with dressing, toss gently to coat. Season with salt and pepper. Garnish with tomato slices.

Ingredients

1 pint grape tomatoes, halved
1 small seedless cucumber, cut into 1/4 inch slices
3 Tbsp. Litehouse® Lite Honey Dijon Dressing

Directions

Combine all ingredients in a medium bowl and mix well. Chill and serve.

Ingredients

2 cups frozen peas, cooked and cooled
1/4 cup sliced celery
1/4 cup diced water chestnuts
2 Tbsp toasted slivered almonds
1/2 cup Litehouse Honey Mustard Dressing (Substitute: Litehouse Lite Honey Dijon Dressing)
8 prawns, grilled

Directions

Mix peas, celery, water chestnuts and toasted almonds with Litehouse Honey Mustard Dressing, adding more to taste. Divide onto 2 plates. Top each with 4 prawns and garnish with pea sprouts.

Just Like Mom's Potato Salad

Ingredients

8 potatoes, boiled and skinned
4 eggs, hard boiled
1/4 cup sliced green onions (optional)
1/4 cup sliced celery (optional)
1/4 cup sweet pickle relish (optional) 
Salt & pepper to taste
1 jar Litehouse® Honey Mustard Dressing & Dip

Directions

Boil potatoes & eggs (I use the same pan and boil them together). Peel potatoes and cut into bite size chunks. Add onions & celery, if desired. Peel and chop eggs into mixing bowl. Add sweet pickle relish and 1 jar Litehouse® Honey Mustard Dressing & Dip. Fold together to combine. Mix gently with potatoes. Refrigerate.

Ingredients

1/3 cup walnuts
2 Belgian endives, leaves separated
3 bunches watercress, rinsed and dried
1/3 cup Litehouse® Lite Honey Dijon Vinaigrette or,
Litehouse® Honey Mustard

Directions

Heat oven to 350F. Place the walnuts on a pie plate and toast until lightly browned, about 5-7 minutes, stirring occasionally. Remove and let cool.
In a large salad bowl add the endives, watercress and toasted walnuts. Toss with dressing; mix well.
