Greek Barley Salad

This hearty main dish salad recipe was shared at a summer reunion on Lake Pend Oreille and it was an instant hit.

 

 

 

Ingredients

3 cups cooked pearl barley (cooking directions follow)
1 can (13-3/4 ounces) artichoke hearts,chopped
1 cup pitted kalamata olives
1 cup (4 ounces) crumbled feta cheese
1/2 cup finely chopped red onion
1/2 cup chopped parsley
1 bottle Litehouse Vinaigrette (Balsamic, Zesty Italian Vinaigrette, and Sophia's are delicious)
16 wooden skewers soaked in water
8 boneless skinless chicken breast halves, cut into 1-1/2 inch cubes

Directions

Combine salad ingredients in large bowl. Drizzle 3/4 cup dressing over salad and mix well. Place chicken in sealable plastic bag; pour in remaining dressing/marinade. Seal bag and turn over to coat chicken pieces. Refrigerate for 20 minutes. Remove chicken from marinade and thread onto skewers. Grill or broil 4 to 5 minutes per side or until cooked through. To serve, place a portion of salad on plate and top with 2 chicken skewers. To cook pearl barley: In medium saucepan with lid, bring 3 cups water to a boil. Add 1 cup pearl barley; return to boil. Reduce heat to low, cover and cook 45 minutes or until barley is tender and liquid is absorbed. Makes about 3 to 3-1/2 cups. Place any extra cooked barley in an airtight container and refrigerate or freeze for up to 1 week.

Italian Antipasto Pasta Salad

Ingredients

1-2 lbs Tortellini cheese pasta, pre-cooked
Preferred amount of Salami
6 oz Provolone cheese, cut into strips
8 oz Artichoke hearts, marinated, drained and chopped
1 small jar pimientos, drained and sliced
1 cup black olives, drained and sliced
1/2 cup grated Parmesan cheese
Salt & Pepper to taste
1 cup Litehouse® Zesty Italian Vinaigrette or,
Litehouse® Tuscan Herb With Lemon or,
Litehouse® Sweet Onion with Dijon 

Directions

In large bowl combine tortellini, salami, provolone cheese, artichoke hearts and olives, with the dressing, mixing gently as the pasta is delicate and will break apart easliy. Top with parmesan cheese. Refrigerate one hour to blend flavors. Before serving, top with pimentos.

Sugar Snap Pea Caprese Salad

Ingredients

1 bunch Mann's Broccolini
8 oz Mann's Stringless Sugar Snap Peas, cut in half
3 Roma tomatoes, cut into bite size pieces
3 Tbsp Litehouse® Instantly Fresh Basil
8 oz Mozzarella cheese, fresh mozzerella in water, cut into bite size
4 tbsp Litehouse® Balsamic Vinaigrette 
Salt & Pepper to taste

Directions

Blanch one bunch of Mann's Broccolini in a large pot of boiling water for 30 seconds so stalks are crisp-tender. Immediately submerge in a bowl of ice water to stop the cooking process. Drain and pat Broccolini dry with paper towel. Cut Broccolini into bite size pieces and place into large bowl. Combine sugar snap peas, tomatoes, basil, mozzarella cheese, Litehouse Balsamic Vinaigrette, and salt and pepper. Gently toss all the ingredients and serve.

Blue Cheese Chopped Salad

A delicious traditional salad topped with not so traditional blue cheese!

Ingredients

6 cups chopped iceberg lettuce
2 cups sliced cucumber
1 cup diced tomato
1 cup sliced celery
1 cup diced red bell pepper
1/2 cup diced carrot
1/2 cup thinly sliced green onion
2 Tbsp. Instantly Fresh Parsley
1 tsp Instantly Fresh Oregano
1 cup

Directions

Combine all ingredients in a large bowl, then drizzle on top Litehouse Bleu Cheese Vinaigrette. Toss salad gently. Top with blue cheese crumbles.

Snow Peas and Tofu Salad

Ingredients

½ (16 ounce) package extra-firm tofu, drained and diced
¾ cup snow peas, trimmed
2 small carrots, grated
1 cup finely shredded red cabbage
2 tbsp chopped peanuts  
1 cup baby corn
¼ cup Litehouse Litehouse® Zesty Italian Vinaigrette or Balsamic

Directions

In a large bowl, place the tofu in Litehouse Zesty Italian dressing and marinate 1 hour in the refrigerator. Bring a pot of water to a boil. Immerse the snow peas in the boiling water for 1 to 2 minutes, then immerse in a bowl of cold water. Drain and set aside. Toss the peas, carrots, cabbage, baby corn, and peanuts with the tofu and Zesty Italian to serve.

Delicious Fruit Salad

A delicious and easy side dish for baked ham or grilled chicken.

Ingredients

2 cups cantaloupe, diced
1 1/2 cups fresh pineapple, diced
1 1/2 cups strawberries, sliced
1 cup seedless grapes, halved
1 banana, sliced
1/2 cup vanilla yogurt (Substitutions: mayonnaise or sour cream)
2/3-1/2 cup Litehouse® Pomegranate Blueberry Vinaigrette
Substitues Include:  Litehouse® Huckleberry Vinaigrette

Directions

Combine all fruit in large bowl. Mix Litehouse® Pomegranate Blueberry Vinaigrette and 1/2 cup vanilla yogurt. Add dressing and toss to coat. Refrigerate until cold, about one hour. Serve chilled. 4 Servings.

Mixed Greens with Grilled Turkey & Blueberries

Take advantage of summers bounty of blueberries and cooking on the gril for this unique salad.

 

 

 

Ingredients

1 10 oz. package Spring Mix or Euro Mix Greens
1 cup blueberries, washed
½ cup sliced almonds (plain, butter toffee or honey glazed)
1# turkey breast (or 2 cups cooked turkey, sliced or cubed)
1 12 oz. jar Litehouse® Pomegranate Blueberry

Directions

Place uncooked turkey breast in zip lock bag. Add ½ cup Litehouse® Pomegranate Blueberry Vinaigrette Dressing. Seal and squish around to cover. Let marinate ½ - 1 hour. Cook turkey by grilling, microwave or baking (approximately 10 minutes). Let rest 3-5 minutes (If using cooked turkey, eliminate this step). Cut turkey in cubes or slices.
In shallow bowl mix lettuce, blueberries and almonds with 3/4 cup Litehouse Pomegranate Blueberry Vinaigrette Dressing. Top with turkey and additional blueberries or almonds for garnish.

Spinach, Chicken & Wild Rice Salad

This is a wonderful salad that is a meal in itself. It is easy to assemble ahead of time. For extra flavor, marinate the chicken breast in Litehouse Organic Raspberry Lime Vinaigrette before cooking.

Ingredients

1 16 oz bag fresh spinach, torn into bit-sized pieces
1 lb boneless, skinless chicken breast, grilled and sliced
2 cups cooked wild rice (1/2 cup raw),
chilled apple, unpeeled, cut into large chunks or 1 pint strawberries, cut in half
1/2 -3/4 cup Litehouse Organic Raspberry Lime Vinaigrette or Raspberry Walnut Vinaigrette

 

 

 

Directions

Place wild rice in bottom of large serving bowl. Layer chicken, spinach, apples or strawberries and walnuts. Just before serving, drizzle Litehouse Organic Raspberry Lime Vinaigrette over salad and toss.

Ingredients

1 can (20 oz) pineapple chunks, drained
1 banana, sliced
2 kiwi, peeled and sliced
1/2 cup walnut halves
1/2 cup yogurt, plain or vanilla
1/2 cup Litehouse® Raspberry Walnut Vinaigrette or,
Litehouse® Pomegranate Blueberry Vinaigrette or,
Litehouse® Huckleberry Vinaigrette 

Directions

Mix together the Litehouse® Vinaigrette (whichever you choose) and 1/2 cup vanilla yogurt in a small bowl. In a large bowl, gently toss together all ingredients except the 1/4 cup chopped walnuts; add dressing and mix gently. Sprinkle with chopped walnuts.

A beautiful salad that tastes as good as it looks! Use seasonal fruits and nuts to change it up.

Ingredients

1/4 cup pecan halves
2 Tbsp. sugar
1 pkg. (10 oz.) torn mixed salad greens
1 pear, cored and thinly sliced
1/4 cup sweetened dried cranberries
1 cup (4 oz.) Litehouse® Blue Cheese Crumbles 
1/2 cup Litehouse® Raspberry Walnut Vinaigrette or,
Litehouse® Pomegranate Blueberry Vinaigrette 

Directions

1. Cook pecans with sugar in small skillet over medium-high heat 3 minutes or until sugar melts, coats pecans and browns slightly; stirring constantly. Remove from pan; let cool.
2. Top salad greens with pear slices, pecans, dried cranberries and Litehouse Bleu Cheese Crumbles. Pour on Litehouse Raspberry Walnut Vinaigrette Dressing and toss lightly.
