Crunchy Asian Cabbage Slaw

A unique take on a classic favorite.

Ingredients

2/3 cups slivered almonds
8 cups shredded cabbage
12 ounces snow peas (remove strings)
1 1/3 cups sliced radishes (thin)
1 1/3 cups sliced green onions (thin)
1 1/3 cups fresh cilantro leaves
1/2 cup Litehouse® Sesame Ginger or,

Directions

Place almonds in cake pan, bake at 350 degrees until golden (shake pan once, 6-9 minutes). Combine cabbage, snow peas, radishes, green onions and cilantro in a large bowl. Mix in Litehouse® Sesame Ginger dressing and serve.

Ingredients

2 pkgs. of ramen noodles
2 pkgs. (16 oz each) coleslaw mix
3 sliced green onions
1/2 cup sunflower seeds (without shells)
1/2 cup sliced toasted almonds

Directions

Break apart the Ramen noodles in a large bowl. Do not use the seasoning pack it comes with. Add the coleslaw mix, onions, sunflower seeds, and almonds. Mix these together gently. Add Litehouse® Tangy Orange Citrus Dressing, toss together.

Mandarin Chicken Salad

Ingredients

8 cups spinach leaves
1 cup spring onions - chopped
1 cup grapes, sliced in half
1 can mandarin oranges - drianed
1/4 cup toasted almonds
1/3 cup Litehouse® Tangy Orange Citrus 
2 cups shredded chicken breast

Directions

Combine all ingredients (except for the dressing) in a large bowl. Add dressing and toss lightly.

Strawberry Chicken Salad

Ingredients

1 cup roasted chicken
1-2 cups sliced strawberries
¼ cup dried cranberries
½ cup Litehouse crumbled feta
½ cup sugared walnuts
4 cups Romaine Lettuce
½ cup Litehouse Raspberry Walnut and/or Poppyseed Dressing

Directions

Evenly divide the roasted chicken, sliced strawberries, dried cranberries, and sugared walnuts onto four plates. Top with Feta Cheese. Pour Raspberry Walnut and/or Poppyseed dressing over the ingredients. Serve chilled.

Luau Fruit Salad

Ingredients

1 can pineapple chunks, drained,
1 orange, peeled and sectioned,
1 apple, cored and chopped,
1 papaya, peeled, seeded, and cut into chunks,
6 cups romaine lettuce,
¼ cup toasted almonds,
1 cup Litehouse Poppyseed Dressing

Directions

Drain pineapple; reserve juice.  In a large bowl, combine pineapple, oranges, apples, and papaya.  Mix together and pour in Litehouse dressing.  Refrigerate, covered.  Before serving, toss with lettuce and sprinkle with almonds.

Mix and Match Tostado Salad

Ingredients

1/2 pound ground beef, browned and drained (or 2 cups shredded rotisserie chicken)
1 12oz pkg pre-cut salad mix(shreds, iceberg, or mixed greens)
1 can beans, drained (kidney, cannellini or black)
1/2 cup corn (or baby corn, cut in half)
1/2 chopped tomatoes
1/2 cup grated cheese
1 avocado, sliced
6 taco shells (flour, corn, bowls, or handfuls of tortilla chips)
1 cup Litehouse® Jalapeno Ranch 

Directions

Prepare meat and set aside.
On 6 individual serving plates (or on a flat platter style bowl) layer in the following order:
Taco shells, salad mix, drizzle of dressing, beans, corn, tomatoes, cheese, avocado. Serve extra dressing and salsa on the side.

Fiesta Salad

Ingredients

1 lb ground beef or ground turkey,
2 teaspoons chipotle seasoning,
1/3 cup chopped red peppers,
½ cup corn,
8 oz spring mix salad greens (1 package),
1 ½ cups chopped cucumber,
¼ cup shredded cheddar cheese,
¼ teaspoon salt,
½ cup Litehouse Salsa Ranch Dressing, or Jalapeno Ranch Dressing,
Tortilla Chips for garnish

 

Directions

In a large nonstick skillet over medium-high heat, spray with cooking oil. Crumble in ground beef or turkey. Season with chili powder, chipotle seasoning, and salt. Cook, stirring occasionally, about 8 minutes or until browned. Divide greens onto 4 plates. Spoon beef/turkey mixture, red peppers, and cucumber over greens. Sprinkle cheese on top. Top with Litehouse Salsa Ranch, Jalapeno Ranch, or BBQ Ranch dressing. Garnish with Tortilla chips.

Italian Caprese Salad

Ingredients

2 vine-ripened tomatoes (with stems)
2 balls fresh mozzarella
2 Tbsp Litehouse® Instantly Fresh Basil
2 fresh basil leaves for garnish
1/4 cup Litehouse® Balsamic Vinaigrette, or 
Litehouse® Red Wine Olive Oil Vinaigrette

 

 

 

Directions

Slice each tomato horizontally into 5 sections. Slice each mozzarella ball into 4 pieces. Place the bottom piece of a tomato onto a plate and top it with a piece of cheese and a basil leaf. Keep layering until you have reformed each tomato ending with the stemmed piece. In every other layer, sprinkle Litehouse Freeze-dried basil herbs. Drizzle Litehouse Balsamic Dressing over each tomato. Roll basil leaves up and slice thin (to look like confetti), place on top as garnish.

1 cups rotisserie peppered chicken, sliced
½ cup sugared walnuts
¼ cup golden raisins
4 cups salad greens
½ cup Litehouse® Honey Mustard, or Litehouse® Lite Honey Dijon Vinaigrette 
Fresh melon slices for garnish

Directions

Evenly divide salad greens, golden raisins, and sugared walnuts, and rotisserie peppered chicken onto 4 plates.  Pour on top Litehouse® Honey Mustard Dressing.  Garnish with fresh melon slices.

BBQ Ranchero Salad

BBQ Ranchero Salad

Enjoy this lite but flavor filled salad!

Ingredients

4 skinless, boneless chicken breast halves (about 1 pound)
1/3 cup Litehouse barbecue sauce
1 pkg (10 ounce) torn mixed salad greens
1 medium tomato, chopped
1 cup shredded cheddar cheese, divided
1 small red bell pepper, cut into short, thin strips
1 cup whole kernal corn, drained
1/2 cup rinsed canned black beans
1/2 cup sliced ripe olives, drained 
1 green onion, thinly sliced
1 cup Litehouse Jalapeno Ranch or Lite Ranch
 

Directions

Brush both sides of chicken with barbecue sauce; grill or broil about 5 inches from heat source about 6 minutes per side; or until juices are clear.  Meanwhile, in a large bowl, combine lettuce, tomato, ½ cheese, red pepper, corn, black beans, olives and spring onion; mix well.  To serve, divide lettuce mixture onto 4 serving plates.  Cut chicken crosswise into ½ inch thick slices; arrange over lettuce.  Drizzle salads with Litehouse dressing and bbq sauce and sprinkle with remaining ½ cup cheese.
