Classic Spinach Salad

Ingredients

10 oz. pre-washed spinach
8 slices bacon, cooked and drained
1 cup mushrooms, sliced
2 hard boiled eggs, chopped
1 cup grape or cherry tomatoes, optional
1/2 cup croutons, optional
1/2 cup Litehouse® Honey Mustard 

 

Directions

Wash and dry spinach. Place in salad bowl. Add remaining ingredients. Top with Litehouse Honey Mustard Dressing and toss gently. Top with croutons, if desired.

Open-Faced Cucumber Sandwiches

A really tasty and healthy sandwich. Try it on some extra-sour rye bread or a hearty sourdough. Light, healthy and delicious.

 

 

 

Ingredients

3 cucumbers, peeled and sliced thin (seedless are great)
8 oz. cream cheese, softened
1/2 cup mayonnaise
1/4 cup sour cream
Loaf of cocktail rye bread
Fresh dill weed for garnish
1/2 cup Litehouse® Ranch or,
Litehouse® Homestyle Ranch or,
Litehouse® Buttermilk Ranch 

 

 

 

Directions

Place cream cheese, Litehouse®Ranch Dressing, mayonnaise and sour cream in a medium bowl and mix together until well blended. Chill at least one hour for flavors to come out. Spread each bread slice with a teaspoon of the mixture and top with a cucumber slice. Sprinkle with dill weed and arrange on a platter.

Harvest Slaw with Sweet Potatoes

Ingredients

12 oz Mann's Sweet Potato Cubes, or Mann's Sweet Potato Fries
12 oz Mann's Broccoli Slaw, or Rainbow Salad
½ cup dried cranberries, raisins, or craisins 1 green apple, diced
½ cup almonds, sliced
1 tsp cinnamon, ground
¼ tsp garlic salt
¼ tsp black pepper, ground
½ cup Litehouse® Buttermilk Ranch or,
Litehouse® Lite Ranch or,

Directions

Microwave Mann's Sweet Potatoes in the bag (if using fries, cut into cubes) for 3.5 minutes, let cool for 5 minutes. In a large bowl combine all ingredients. Toss with ½ cup of Litehouse dressing (see suggestions above). Can be chilled up to 8 hours before serving.

Ingredients

1 pound cooked sirloin steak, thinly sliced
4 1-inch thick slices of white bread, lightly toasted
1 small head Boston lettuce, washed and dried
1 medium tomato, sliced
1 Tbsp. fresh lemon juice
1/3 cup Litehouse® Jalapeno Ranch

 

Directions

Layer the bread with lettuce leaves, tomato, and steak. Drizzle with dressing. Serve the open-faced sandwiches with our Honey Dijon Tomato Salad on the side.

Ranch Chicken Salad Sandwiches

A tasty variation from traditional chicken salad recipes. You may also wish to substitute Litehouse Bleu Cheese dressing for the Ranch Dressing. Makes great picnic sandwiches or a quick mealtime salad.

Ingredients

Texas toast or thick cut sandwich bread
2 cups cooked chicken
1/3 cup finely diced celery
1/4 tsp salt
1/2 tsp sugar
1/4 tsp freshly ground pepper
1/3 cup sweet pickle relish
2/3-1 cup Litehouse® Ranch or,
Litehouse® Homestyle Ranch

Directions

Prepare chicken until completely cooked. Remove from heat and cool completely. You can save the chicken broth, seal and refrigerate for up to one week. After chicken is cool, cut into tiny pieces. Place in a mixing bowl and add all other ingredients and mix well. Butter one side of sandwich bread and grill. Place salad in between grilled bread slices and serve. Or place lettuce leaves in a bowl and add salad on top. May be served with crushed walnuts or pecans.

Chinese Chicken Salad Wrap

The perfect Chinese Chicken salad or wrap with a wonderful mix of vegetables, chicken, wonton noodels, topped off with Litehouse Sesame Ginger salad dressing!

Ingredients

1/2 lb. asparagus, trimmed to small/medium pieces
2-3 mandarin or navel oranges
1 to 1 1/2 cups vegetable oil
4 fresh wontons cut into strips
6 cups shredded cabbage
2 cups cooked chicken, cut in cubes
1 large avocado, sliced
3 onions, sliced
2 Tbsp. toasted sesame seeds
Large flour tortillas (optional, for wrap)
1/2 cup Litehouse® Tangy Orange Citrus  

Directions

Boil 1 quart water, add asparagus and cook about 2-3 minutes(until crisp/tender). Drain, the put asparagus into ice water to stop it from cooking. Set aside. Peel oranges and slice, then set aside. Pour vegetable oil into pan (1/2 deep) and set on medium-high heat. At 350 degrees, add wonton strips and fry until golden brown (about 30 seconds). Lift out with slotted spoon and drain oil. in a larger serving bowl, toss cabbage, chicken, and asparagus with Litehouse Soy Ginger or Sesame Ginger dressing. Top with avocado, orange slices, and wonton strips, then add the green onions and sesame seeds. Can also put into wrap.

Greek Caesar Salad

Lisa Stansbury's recipe combines the classic taste of traditional Caesar salad with her own unique combination of chicken, olives & Instantly Fresh Herbs.

Ingredients

2 heads romaine lettuce
4 Tbsp. Litehouse® Instantly Fresh Red Onion 
2 Tbsp. Litehouse® Instantly Fresh Garlic 
2 oz. sliced black olives (small can)
4 oz. Litehouse® Feta Cheese Crumbles 
3 tomatoes, diced
1 can chunk chicken (5 oz.)
13oz  Litehouse® Caesar Caesar or,

Directions

Rinse the romaine lettuce and tear into bite sized pieces. Place in a bowl. Add 4 Tbsp. Litehouse® Freeze-dried red onion (re-hydrate in 1 Tbsp. water for 1-2 minutes) and 2 Tbsp. Litehouse® Freeze-dried garlic. Toss into lettuce. Add olives, tomatoes and chicken. Toss again to distribute ingredients throughout the salad. Top with Litehouse Caesar Dressing. Enjoy!

Grilled Chicken Caesar Pitas

I like to toss all the ingredients together; you can layer them in the pita bread in order. Excellent for your next picnic or box lunch.

Ingredients

4 boneless, skinless chicken breast halves
6 cups (10 oz.) romaine lettuce leaves, torn
1/2 cup black olives, sliced
1 cup grape tomatoes, cut into halves
4 tbsp grated parmesan cheese
6 (6-inch) pita bread rounds
1/2 cup (plus 2 Tbsp.) Litehouse® Caesar Caesar or
Litehouse® Homestyle Ranch 

Directions

1. Brush both sides of chicken breasts with 2 tablespoons dressing. Preheat grill or broiler. Grill chicken 5 inches from heat soruce 6 minutes per side or until chicken is cooked through. Slice crosswise into 1/4-inch slices.
2. Combine lettuce, chicken, olives, tomatoes and cheese in large bowl; toss with remaining 1/2 cup dressing. Cut pita breads into halves; open pockets. Fill with lettuce mixture.

1 (10 oz.) box dry plain couscous
1 (16 oz.) bag frozen white or yellow corn, thawed and drained
1 (15 oz.) can black beans, rinsed and drained
4 medium green onions, sliced (white and green parts)
1 medium red bell pepper
Finely chopped Coarsely ground black pepper
1½ cup Litehouse® Zesty Italian Vinaigrette  or Litehouse® Red Wine Olive Oil Vinaigrette 

Directions

Prepare couscous according to package. Combine couscous, corn, beans, green onions, and bell pepper in a bowl; mix gently. Add Litehouse dressing; toss well. Season with salt and pepper. Serve warm or cold.

Directions

Pre-heat grill to medium heat. Place the vegetables in the grill pan. Grill about 10 minutes or until crisp/tender, still turning the vegetables. Place in large bowl, add Litehouse Vinaigrette of choice. Top with parmesan cheese.
