Crunchy Asian Cabbage Slaw

Ingredients

2/3 cups slivered almonds
8 cups shredded cabbage
12 ounces snow peas (remove strings)
1 1/3 cups sliced radishes (thin)
1 1/3 cups sliced green onions (thin)
1 1/3 cups fresh cilantro leaves
1/2 cup Litehouse® Sesame Ginger or,

Directions

Place almonds in cake pan, bake at 350 degrees until golden (shake pan once, 6-9 minutes). Combine cabbage, snow peas, radishes, green onions and cilantro in a large bowl. Mix in Litehouse® Sesame Ginger dressing and serve.

Crispy Noodle Asian Salad

A simple oriental salad topped with an award winning salad dressing.

Ingredients

2 pkgs. of ramen noodles
2 pkgs. (16 oz each) coleslaw mix
3 sliced green onions
1/2 cup sunflower seeds (without shells)
1/2 cup sliced toasted almonds
Litehouse® Tangy Orange Citrus dressing

Directions

Break apart the Ramen noodles in a large bowl. Do not use the seasoning pack it comes with. Add the coleslaw mix, onions, sunflower seeds, and almonds. Mix these together gently. Add Litehouse® Tangy Orange Citrus Dressing, toss together.

Grilled Chicken Caesar Wraps

Wrap up your salad in these easy to take along wraps!

Ingredients

2 boneless, skinless chicken breast halves
½ cup + 2 tbsp  divided Litehouse Homestyle Ranch, Litehouse Caesar, or Litehouse Lite Ranch Dressing
4 cups (10 oz) romaine lettuce leaves, torn
½ cup black olives, sliced
1 cup grape tomatoes, cut into halves
2 tbsp grated Parmesan cheese
alfalfa sprouts (optional)
4 (6-inch) whole wheat tortillas (or pita rounds, cut in half)

Directions

Brush both sides of chicken breasts with 2 tablespoons dressing.  Preheat grill or broiler.  Grill chicken 5 inches from heat source 6 minutes per side or until chicken is cooked through.  Slice crosswise into ¼-inch slices.  Combine lettuce, chicken, olives, tomatoes and cheese in large bowl; toss with remaining ½ cup dressing.  Mound mixture in center of tortilla.  Top with alfalfa sprouts, if desired, and roll up.  If using pita round, cut in half and stuff with mixture, topping with alfalfa sprouts.

Strawberry Chicken Salad

Ingredients

1 cup roasted chicken
1-2 cups sliced strawberries
¼ cup dried cranberries
½ cup Litehouse crumbled feta
½ cup sugared walnuts
4 cups Romaine Lettuce
½ cup Litehouse Raspberry Walnut and/or Poppyseed Dressing

Directions

Evenly divide the roasted chicken, sliced strawberries, dried cranberries, and sugared walnuts onto four plates. Top with Feta Cheese. Pour Raspberry Walnut and/or Poppyseed dressing over the ingredients. Serve chilled.

Mix and Match Tostado Salad

Ingredients

1/2 pound ground beef, browned and drained (or 2 cups shredded rotisserie chicken)
1 12oz pkg pre-cut salad mix(shreds, iceberg, or mixed greens)
1 can beans, drained (kidney, cannellini or black)
1/2 cup corn (or baby corn, cut in half)
1/2 chopped tomatoes
1/2 cup grated cheese
1 avocado, sliced
6 taco shells (flour, corn, bowls, or handfuls of tortilla chips)
1 cup Litehouse® Jalapeno Ranch 

Directions

Prepare meat and set aside.
On 6 individual serving plates (or on a flat platter style bowl) layer in the following order:
Taco shells, salad mix, drizzle of dressing, beans, corn, tomatoes, cheese, avocado. Serve extra dressing and salsa on the side.

Ingredients

1 cups rotisserie peppered chicken, sliced
½ cup sugared walnuts
¼ cup golden raisins
4 cups salad greens
½ cup Litehouse® Honey Mustard, or Litehouse® Lite Honey Dijon Vinaigrette 
Fresh melon slices for garnish

Directions

Evenly divide salad greens, golden raisins, and sugared walnuts, and rotisserie peppered chicken onto 4 plates.  Pour on top Litehouse® Honey Mustard Dressing.  Garnish with fresh melon slices.

10 dates, pitted and chopped

Directions

Combine the pineapple, carrots, dates, ham and cabbage in a large bowl. Pour the Litehouse Coleslaw dressing over the slaw and toss. Divide the coleslaw onto the tortillas and roll into a wrap.

Ingredients

4 slices sourdough or artisan bread,
1/2 pound steak,
4 roasted red peppers,
1/4 cup Litehouse Chunky Blue Cheese Dressing 

Directions

Grill, broil or pan-fry steak to your preferred degree of doneness. Allow to cool 5 to 10 minutes. Slice against the grain or diagonally and set aside. Preheat panini press or skillet. Spread Litehouse Dressing on bread, using more as needed. Layer 1/2 the sliced steak and top with 2 roasted red peppers. Grill approximately 2-3 minutes. If using a skillet, turn and grill on the other side.

Chicken and Corn Cobb Salad Wrap

A gourmet take on a classic chicken wrap.

Ingredients

2 cups sliced grilled chicken breast,
1 cup of chopped fried bacon,
¼ cup of chopped avocado,
1 cup of grilled corn – cut off the cob,
½ cup of chopped tomato,
¼ cup diced red onion,
½ cup of chopped hard-boiled egg,
¼ cup Instantly Fresh Cilantro
2-3 cups of romaine lettuce, washed, dried, and torn,
Salt and pepper,
Flour Tortillas,
½ cup Litehouse Chunky Blue Cheese Dressing

Directions

In a large bowl, toss together the first 9 ingredients.  Toss well and season with salt and pepper.  Add dressing and mix well.  Put about ½ cup of the salad mixture on the bottom third of a flour tortilla, fold in the sides, and wrap tightly.  Serve immediately.

Cobb Salad with Creamy Blue Cheese Dressing

A traditional Cobb style salad with fresh ingredients, bacon and chicken makes a main dish meal.

Ingredients

12 oz. torn romaine lettuce leaves
4 oz. Idaho Blue Cheese Crumbles
1 hard-cooked egg, cut into wedges
1 avocado, cut into thin wedges
1 large tomato, cut into wedges
4 slices bacon, crisply cooked, crumbled
2 boneless, skinless chicken breast halves, cooked, cut into 1/4-inch slices or 2 cups (12 oz.) cooked shrimp (optional)
1/2 cup Litehouse® Big Bleu Dressing & Dip or Litehouse® Bleu Cheese Dressing

Directions

Place salad greens on large platter. Arrange cheese, egg, avocado, tomato, bacon and chicken, if desired, over greens.
Spoon dressing over salad just before serving.
