Chicken Caesar Salad Sandwiches

Chicken salad sandwiches are an easy lunch, especially with pre-cooked chicken. Add extra flavor with Opa Greek-style Yogurt Caesar dressing!

 

Ingredients

2 ½ cups diced chicken
1 cup diced sugar snap peas
¼ cup Litehouse instantly fresh red onion
½ cup Litehouse OPA Greek style Caesar dressing
¼ cup mayonnaise
¼ cup pickle juice
½ tsp pepper
¼ tsp salt
avocado and red onion slices (optional)

 

Directions

Combine all of the ingredients! Use the salad for sandwiches or wraps.

 

Ranch Winter Panzanella with Chicken

Ranch Winter Panzanella with Chicken

Savor the earthy-sweet flavors of the roasted winter vegetables found in this hearty cool-season salad. Pieces of succulent chicken, homemade crispy croutons and creamy OPA Greek yogurt ranch dressing transform a basic “bread” side salad into a well-rounded meal.

Ingredients

½ loaf (about 8 ounces) day-old French, Sourdough or Rustic bread (cut into 1” cubes)
4 Tbsp olive oil (divided)
4 Tbsp Litehouse Food Instantly Fresh Italian Herb Blend (divided)
2 teaspoons coarse sea salt (divided)
1 10-oz package frozen cubed butternut squash
1 lb fresh baby Brussels sprouts (halved)
1 large red onion (peeled and cut into 1” chunks)
1 lb pre-cooked chicken breast (cut into large chunks)
1 cup packed fresh spinach leaves
½ cup Litehouse Food OPA Ranch Dressing

 

Directions

1.Preheat oven to 400 F.
2.Add bread cubes to large bowl. Drizzle with 2 tablespoons of the olive oil and sprinkle with 2 tablespoons of the Italian Herb Blend and 1 teaspoon of the salt.
3.Toss together to coat bread. Spread out on rimmed baking sheet and bake uncovered for 10 minutes, stirring once halfway through. Remove from oven to cool on paper towel. Keep oven heated.
4.In large bowl, add cubed squash (okay if still frozen), Brussels sprouts, and onion. Drizzle with remaining 2 tablespoons of olive oil and sprinkle with remaining 2 tablespoons Italian Herb Blend and remaining 1 teaspoon salt. Dust off crumbs from crouton baking sheet and spread out vegetable mixture in single layer. Roast uncovered in 400 F degree oven for 30 minutes, stirring gently halfway for even cooking.
5.Remove vegetables from oven and let cool down for approximately 15 minutes. Add prepared bread croutons, cubed chicken and spinach to pan; toss together. Transfer to serving platter and drizzle with Litehouse Food OPA Ranch Greek Yogurt Dressing or serve on the side. Best served warm or at room temperature.
*tip: frozen French bread is very easy to cube

Crunchy Asian Salad

Ingredients

1 package (3 oz) ramen noodle soup mix (any flavor),
2 cups shredded cabbage,
½ cup diced red onion,
¼ cup sliced almonds (2 oz),
1 medium red bell pepper, cut into 1x1/8 inch strips,
1 small can mandarin oranges, drained,
2 cups coarsely chopped fresh baby spinach leaves,
½ cup Litehouse Tangy Orange Citrus Dressing

Directions

Break up ramen noodles in a bag before opening.  Discard seasoning packet from soup package.  Add noodles and all remaining salad ingredients except oranges and spinach to dressing; toss to mix well.  Stir in oranges and spinach.  Serve immediately or refrigerate up to 8 hours.

POM Turkey Salad

This delicious salad becomes a refreshing summer meal when paired with crusty rolls, iced tea, and sorbet.

Ingredients

1 11-ounce bag pre-washed lettuce mix,
or 6 cups torn lettuce leaves
2 cups cubed cooked turkey, chicken or ham
1 cup shredded carrot
2 green onions, sliced
1/2 cup sliced pitted ripe olives, drained
1/2 cup crumbled feta or blue cheese
Litehouse Pomegranate Blueberry Vinaigrette Dressing

Directions

In a large bowl toss together lettuce, turkey, carrots, onions, olives, and cheese. Drizzle Litehouse® Pomegranate Blueberry Vinaigrette Dressing over salad. Toss lightly and serve immediately.

Turkey Taco Salad

Great in a crisp taco bowl, served with tortilla chips, or wrapped in soft tortillas with shredded lettuce this salad is easy to prepare and good for you!!

Ingredients

1 ½ pounds turkey breast - seasoned, cooked, cooled and shredded (2 ½ cups),
1 cup cooked black beans, 1 cup cherry tomatoes - halved,
1 roasted red pepper - diced,
1 ½ cup corn kernels,
2 tbsp diced red onion,
2 heaping tbsp coarsely chopped fresh cilantro,
Generous 3/4 cup Litehouse Jalapeno Ranch Dressing,
shredded lettuce,
salt and cracked pepper

Directions

Combine cooked and shredded or diced turkey breast with black beans, cherry tomatoes, roasted pepper, corn, herbs and dressing…Season to taste. Serve on top of shredded lettuce.

2 bagels, split and toasted,
8 tomato slices,
8 bacon strips, cooked,

Directions

Place bagel halves cut side up on a baking sheet. Spread with Litehouse Jalapeno Ranch Dressing. Top each with two tomato slices and two bacon strips. Sprinkle with cheese. Broil 5 in from the heat for 1-2 minutes or until cheese begins to brown. Serve with additional Dressing. Yield: 4 sandwiches

Corn Soup with Oregano

A seasonal classic.

Ingredients

12 oz. frozen whole corn kernels, defrosted,
4 1/2 cups chicken stock,
1 Tbsp. Litehouse® Instantly Fresh Oregano
4 tsp sour cream for garnish
Salt and freshly ground black pepper, to taste.

Directions

Puree the corn in a food processor with a little of the chicken stock, then force the mixture through a sieve. Combine the corn puree with the remaining chicken stock in a saucepan, cover and simmer for 5 minutes. Stir in oregano, season to taste with salt and pepper, and simmer for 5 minutes longer. Garnish each bowl of soup with sour cream.

Chicken Waldorf Salad

This wonderful salad combines two favorites... Chicken salad and Waldorf salad! It is delicious by itself or scooped onto a "bowl" made of Bibb lettuce leaves.

Ingredients

3 cups cooked, diced chicken breast
⅓ cup sweet onion, finely chopped
1 cup red bell pepper, finely chopped
2 cups red apples, diced, with or without skin
1 ½ cups celery, diced
½ cup chopped walnuts
1/8 tsp. salt (optional),
⅓ cup Litehouse Ranch Dressing, or
⅓ cup Litehouse Jalapeno Ranch Dressing

Directions

Combine chicken, onion, bell pepper, apple, celery, walnuts and salt, if desired, in large bowl.  Add dressings; toss to mix well.

Cajun Chicken Salad

A spicy approach to an old classic.

Ingredients

2 boneless chicken breasts,
1/2 cup black olives,
1/4 cup bean sprouts,
1 large tomato, sliced,
1 hard boiled egg, sliced,
Chow mein noodles,
Romaine or green leaf lettuce, shredded,
Cajun seasoning (to taste),
Litehouse® Chunky Blue Cheese Dressing

Directions

Marinate Cajun with boneless chicken breasts. Grill or broil until done. Put lettuce on salad plates. Top with olives, bean sprouts, tomatoes, egg and chow mein noodles. Slice chicken into thin strips and place on top of salads. Top with dressing.
