16 baby bell peppers
½ pound ground turkey
½ cup cheddar cheese, grated
3 tablespoons red onion, minced
2 cloves of garlic, minced
1 egg
1 cup tortilla chips, finely crushed
1 teaspoon salt
2 tablespoons Litehouse® Instantly Fresh Cilantro
1 cup Litehouse® OPA Ranch
Preheat oven to 400˚F.
Cut a thin slice from the stem end of each bell pepper to remove the top of each pepper. Use your finger to remove the seeds and membranes.
In a medium bowl, combine the ground turkey, cheddar cheese, red onion, Litehouse freeze dried cilantro, garlic, egg, tortilla chips and salt. Use a rubber spatula to mix together until blended evenly.
Stuff each pepper with the turkey mixture and arrange on a sheet pan. Bake the peppers for approximately 45 minutes, until cooked through and well roasted.
Serve hot alongside a serving dish of Litehouse Opa Ranch Greek ranch yogurt for dipping.

2 TBSP Litehouse Freeze-dried Spring Onion
1/2-3/4 cup celery, finely diced
1 8 oz package cream cheese, softened
4 Tbsp. Litehouse® Original Bleu Cheese Dressing & Dip or Litehouse® Big Bleu™ Dressing & Dip
1/2 tsp pepper
2 pounds imitation crab meat, cut up
Mix well. Chill. Serve in a lettuce leaf or on platter surrounded with crackers.
Substitution: Litehouse® Chunky Bleu Cheese Dressing & Dip may be used in place of Original or Big Bleu.

1 Tbsp Litehouse® Instantly Fresh Parsley
1 tsp lime juice
Salt and pepper to taste
2 Tbsp celery, finely chopped

1 Tbsp water
1/4 cup pine nuts
2/3 cup extra-virign olive oil
1/2 cup shredded parmesan cheese
2/3 cup Litehouse® Instantly Fresh Basil
1/2 Tbsp. garlic
Salt
Pepper
Combine basil, water, garlic and pine nuts in a food processor and pulse until completely blended. Add oil and salt & pepper to taste. Blend until smooth. Pour contents into a bowl and mix in parmesan cheese. Serve or store in an air tight container.

Homemade Pitas with Hummus and Tzatiki with Greek Salad.
Traditional Tzatziki
3 Tbsp. olive oil
1 Tbsp. vinegar
2 cloves garlic, minced finely
1/2 tsp. salt
3 Tbsp. of fresh mint
1 c. greek yogurt, strained
2 cucumbers, peeled, seeded and diced
1 tsp. Instantly Fresh Dill
Plank Roasted Garlic Hummus Ingredients
Two 17 oz. cans of chick peas / garbanzo bean
2 Tbsp. of Tahini
1 bulb of plank roasted garlic
Juice of 2 lemons
3 Tbsp. of sage
Salt and pepper to taste
Cedar Plank-Roasted Garlic
Soak Cedar Grilling Plank for an hour or more. Heat up your grill to Medium-Low Heat (300°) and cut the top off of a whole bulb of garlic. Drizzle with oilve oil and place sliced-side down on plank, then cover with foil. Roast garlic on plank for about 30 minutes. Remove foil and enjoy.
Hummus Directions:
Combine all ingredients together in food processor and tweak the seasoning as you go. Add cayenne pepper for an extra kick!
