Grilled Honey Mustard Salmon

The tangy lime flavor combined with the sweetness of the honey mustard make this an excellent enhancement to fresh salmon.

Ingredients

4 salmon filets (about 6 oz. each)
1 Tbsp. Litehouse® Instantly Fresh Dill 
1 fresh lime, cut in half
Salt & pepper to taste
1/2 cup Litehouse® Honey Mustard or,
Litehouse® Lite Honey Dijon Vinaigrette  

Directions

Rinse the salmon filets under cold water and pat dry. Squeeze the juice from l/2 lime over the filets; season with salt and pepper. Preheat grill or broiler. Grill the salmon on high heat to desired doneness, but do not over cook.
Whisk dressing and dill in a small bowl. Add the juice from the other 1/2 of lime, mixing well. Spoon the sauce over the cooked filets and serve. Serves 4.

Ingredients

1/3 cup walnuts
2 Belgian endives, leaves separated
3 bunches watercress, rinsed and dried
1/3 cup Litehouse® Lite Honey Dijon Vinaigrette or,
Litehouse® Honey Mustard

Directions

Heat oven to 350F. Place the walnuts on a pie plate and toast until lightly browned, about 5-7 minutes, stirring occasionally. Remove and let cool.
In a large salad bowl add the endives, watercress and toasted walnuts. Toss with dressing; mix well.

Simple & Easy Chicken Stir Fry

A quick and easy recipe, ready in 10 minutes!

Ingredients

2 tsp oil
1 lb boneless skinless chicken breast, cut into strips
3 cups frozen stir-fry vegetables, thawed
1/4 cup Litehouse® Sesame Ginger or Litehouse® Thai Peanut 
2 tbsp soy sauce
1 tbsp honey
1/4 cup chopped peanuts
4 cups hot cooked instant white rice

Directions

Heat oil in a large skillet on medium high heat. Add chicken; cook and stir 7 minutes or until no longer pink. Add vegetables, dressing, soy sauce and honey; mix well. Cook an additional 2 minutes or until heated through. Sprinkle with peanuts. Serve over rice.

Ingredients

8oz Sugar Snap Peas, blanched
8 oz firm tofu, cut into cubes
2 Tbsp. oil
½ cup Litehouse® Sesame Ginger

Directions

 Heat oil over med-high heat. Lightly pan fry tofu till golden. Add in blanched sugar snap peas and dressing. Serve. May also be chilled and served as a cold salad.

Ingredients

1 head romaine lettuce
1/2 pint grape tomatoes, cut in half
1/2 pint strawberries, sliced

Directions

Wash, dry and chop lettuce. Toss lettuce, tomatoes, strawberries and cheese with dressing. Serves 4.

Ingredients

2 Grilled, marinated chicken breast, sliced
4 cups Fresh mix of greens
1 cup Crisp granny smith apples, chopped
¼ cup sugared  walnuts
¼ cup blue cheese crumbles
½ cup Litehouse Balsamic Vinaigrette

Directions

In a large bowl, add salad greens, granny smith apples, sugared walnuts, blue cheese crumbles, and marinated chicken.  Add in Litehouse Balsamic Vinaigrette dressing. Toss well.  Divide on 4 plates.

Citrus Shrimp Salad & Sugar Snap Peas with Romaine Hearts

This is the perfect summer season recipe where you can use ingredients fresh from the garden!

Ingredients

3 oranges
1½ shrimp, cooked, tails off
4 cups Sugar Snap Peas
1 small cucumber, sliced
3 Tbsp. fresh mint
1 Tbsp. tarragon
Romaine Hearts
1 cup Litehouse® Fuji Apple Vinaigrette 
2oz. Blue Cheese crumbles

Directions

Using a zester or vegetable peeler, zest one of the oranges. Chop the zest very finely and place it in a large bowl. Using a sharp knofe, remove the rest of the peel from the first orange, and all the peel from the remaining oranges. Working over the bowl to catch the juice, carefully cut out the orange segments. Add shrimp, stringless sugar snap peas, cucumber, mint and plates. Divide salad evenly among plates.

Pecan Encrusted Chicken Salad with Fuji Apple Vinaigrette

This is a delicious sweet and savory salad with fresh ingredients dressed with an award-winning Fuji Apple Vinaigrette. The bacon and blue cheese combined with the dried cranberries and apples make this a unique and tasty salad!

Ingredients

2 boneless skinless chicken breasts
1 cup pecans
½ cup breadcrumbs
1 egg
1 head of romaine lettuce
1 bag of spinach and arugula mixture
½ cup dried cranberries
4 slices of bacon, cooked
1 small apple, thinly sliced
½ cup Litehouse® Bleu Cheese Crumbles 
1 cup Litehouse® Fuji Apple Vinaigrette 
Salt and pepper

 

 

 

Directions

Preheat oven to 400 degrees. Combine the pecans, breadcrumbs, and a dash of salt and pepper in a food processer and pulse until evenly ground. Place a beaten egg in a shallow bowl. Coat the chicken breasts in the egg and then coat evenly with the pecan mixture. Place the coated chicken in a greased pan and bake for 20 minutes.

Broccoli Waldorf Salad

Ingredients

6 cup broccoli florets
1 large red apple, chopped
1/2 cup raisins
1/4 cup chopped pecans
1/2 cup Litehouse® Coleslaw or Litehouse® Fuji Apple Vinaigrette

Directions

Combine the first four ingredients in a large serving bowl. Drizzle with Litehouse Coleslaw Dressing; toss to coat.
Note: Broccoli can be blanched first. Bring pot of water to boil; submerge broccoli for 1 minute. Drain and immerse in cold water immediately to chill.

Ingredients

1 Pkg (6 oz.) mixed lettuce
¼ cup red onion, finely chopped
½ cup celery, sliced
2/3 cup fresh mango, diced (substitute: green peas)
¼ cup red bell pepper, julienne sliced
1 ripe avocado, sliced
8 oz. small cooked shrimp and/or lump crab meat
1/2 cup Litehouse® Ranch or,
Litehouse® Lite Ranch or,
Litehouse® Buttermilk Ranch 

Directions

In a medium bowl, toss together mixed lettuce, onion, celery, mango, red bell pepper. Top with avocado and cooked shrimp. Drizzle lightly with dressing just prior to serving and pass dressing with salad.
