Fiesta Salad

Ingredients

1 lb ground beef or ground turkey,
2 teaspoons chipotle seasoning,
1/3 cup chopped red peppers,
½ cup corn,
8 oz spring mix salad greens (1 package),
1 ½ cups chopped cucumber,
¼ cup shredded cheddar cheese,
¼ teaspoon salt,
½ cup Litehouse Salsa Ranch Dressing, or Jalapeno Ranch Dressing,
Tortilla Chips for garnish

 

Directions

In a large nonstick skillet over medium-high heat, spray with cooking oil. Crumble in ground beef or turkey. Season with chili powder, chipotle seasoning, and salt. Cook, stirring occasionally, about 8 minutes or until browned. Divide greens onto 4 plates. Spoon beef/turkey mixture, red peppers, and cucumber over greens. Sprinkle cheese on top. Top with Litehouse Salsa Ranch, Jalapeno Ranch, or BBQ Ranch dressing. Garnish with Tortilla chips.

Italian Caprese Salad

Ingredients

2 vine-ripened tomatoes (with stems)
2 balls fresh mozzarella
2 Tbsp Litehouse® Instantly Fresh Basil
2 fresh basil leaves for garnish
1/4 cup Litehouse® Balsamic Vinaigrette, or 
Litehouse® Red Wine Olive Oil Vinaigrette

 

 

 

Directions

Slice each tomato horizontally into 5 sections. Slice each mozzarella ball into 4 pieces. Place the bottom piece of a tomato onto a plate and top it with a piece of cheese and a basil leaf. Keep layering until you have reformed each tomato ending with the stemmed piece. In every other layer, sprinkle Litehouse Freeze-dried basil herbs. Drizzle Litehouse Balsamic Dressing over each tomato. Roll basil leaves up and slice thin (to look like confetti), place on top as garnish.

BBQ Ranchero Salad

Enjoy this lite but flavor filled salad!

Ingredients

4 skinless, boneless chicken breast halves (about 1 pound)
1/3 cup Litehouse barbecue sauce
1 pkg (10 ounce) torn mixed salad greens
1 medium tomato, chopped
1 cup shredded cheddar cheese, divided
1 small red bell pepper, cut into short, thin strips
1 cup whole kernal corn, drained
1/2 cup rinsed canned black beans
1/2 cup sliced ripe olives, drained 
1 green onion, thinly sliced
1 cup Litehouse Jalapeno Ranch or Lite Ranch
 

Directions

Brush both sides of chicken with barbecue sauce; grill or broil about 5 inches from heat source about 6 minutes per side; or until juices are clear.  Meanwhile, in a large bowl, combine lettuce, tomato, ½ cheese, red pepper, corn, black beans, olives and spring onion; mix well.  To serve, divide lettuce mixture onto 4 serving plates.  Cut chicken crosswise into ½ inch thick slices; arrange over lettuce.  Drizzle salads with Litehouse dressing and bbq sauce and sprinkle with remaining ½ cup cheese.

Spinach Salad with Homestyle Ranch Dressing

All the flavor of the classic BLT in an easy-to-make salad.

Ingredients

20 oz. young spinach, rinsed
2 Tbsp. Litehouse® Freeze-Dried Red Onion
1/2 pound mushrooms, thinly sliced
2 medium tomatoes, cut into wedges
1/4 pound bacon, crisply fried and crumbled
8 oz. Litehouse® Homestyle Ranch or,
Litehouse® Lite Ranch or,
Litehouse® Buttermilk Ranch 

Directions

Combine spinach, onion, mushrooms and tomatoes in a bowl. Toss with dressing. Sprinkle with bacon and serve. Serves 8

Asparagus Temptation with Angel Hair Pasta

Ingredients

1 lb angel hair pasta
1 medium onion
1 Tbsp olive oil
1 1/2 lbs asparagus chopped in 1/2” pieces
Salt and pepper to taste
Parmesan cheese to taste
Blue Cheese Crumbles 
1 to 1 1/2 c. Litehouse® Red Wine Olive Oil Vinaigrette

Directions

In a large skillet, sauté 1 medium minced onion in 1 tbsp Olive Oil until lightly browned. Add chopped asparagus stems and tips. Cook until tender, tossing frequently. Mix in 1 to 1 ½ cups Litehouse Red Wine and Olive Oil Dressing. Add salt and pepper to taste. Toss with cooked and drained angel hair spaghetti and serve hot or cold. Sprinkle with grated parmesan cheese.

Blueberry Salad

Simple, fresh and fast. 

Ingredients

15 oz spring greens
3/4 cup fresh blueberries
1 cup dry roasted walnuts chopped
1 cup Blue Cheese Crumbles
1/2 cup Litehouse® Bleu Cheese Vinaigrette  or Litehouse® Chunky Bleu Cheese

Directions

Add all ingredients together, toss and serve. You can also add sliced grilled chicken or steak for a great summer supper!

Herb Crusted Prime Rib

Succulent prime rib with a flavorful herb crust is sure to be a crowd pleaser!

Ingredients

5 lbs roast beef
2 Tbsp Litehouse® Instantly Fresh Garlic 
1 Tbsp Litehouse® Instantly Fresh Basil  
3 Tbsp water
1 Tbsp Litehouse® Instantly Fresh Thyme
4 Tbsp olive oil
1 Tbsp salt
2 Tbsp black pepper

 

 

 

Directions

Place the roast in a roasting pan with the fatty side up. In a small bowl, mix together the garlic, basil,  and water. Allow 2 minutes for rehydration and then add olive oil, salt, pepper and thyme. Spread the mixture over the fatty layer of the roast, and let the roast sit out until it is at room temperature, no longer than 1 hour.
Preheat the oven to 500 degrees F (260 degrees C). Bake the roast for 20 minutes in the preheated oven, then reduce the temperature to 325 degrees F (165 degrees C), and continue roasting for an additional 60 to 75 minutes
The internal temperature of the roast should be at 135 degrees F (57 degrees C) for medium rare. Allow the roast to rest for 10 or 15 minutes before carving.

Greek Barley Salad

This hearty main dish salad recipe was shared at a summer reunion on Lake Pend Oreille and it was an instant hit.

 

 

 

Ingredients

3 cups cooked pearl barley (cooking directions follow)
1 can (13-3/4 ounces) artichoke hearts,chopped
1 cup pitted kalamata olives
1 cup (4 ounces) crumbled feta cheese
1/2 cup finely chopped red onion
1/2 cup chopped parsley
1 bottle Litehouse Vinaigrette (Balsamic, Zesty Italian Vinaigrette, and Sophia's are delicious)
16 wooden skewers soaked in water
8 boneless skinless chicken breast halves, cut into 1-1/2 inch cubes

Directions

Combine salad ingredients in large bowl. Drizzle 3/4 cup dressing over salad and mix well. Place chicken in sealable plastic bag; pour in remaining dressing/marinade. Seal bag and turn over to coat chicken pieces. Refrigerate for 20 minutes. Remove chicken from marinade and thread onto skewers. Grill or broil 4 to 5 minutes per side or until cooked through. To serve, place a portion of salad on plate and top with 2 chicken skewers. To cook pearl barley: In medium saucepan with lid, bring 3 cups water to a boil. Add 1 cup pearl barley; return to boil. Reduce heat to low, cover and cook 45 minutes or until barley is tender and liquid is absorbed. Makes about 3 to 3-1/2 cups. Place any extra cooked barley in an airtight container and refrigerate or freeze for up to 1 week.

Italian Antipasto Pasta Salad

Ingredients

1-2 lbs Tortellini cheese pasta, pre-cooked
Preferred amount of Salami
6 oz Provolone cheese, cut into strips
8 oz Artichoke hearts, marinated, drained and chopped
1 small jar pimientos, drained and sliced
1 cup black olives, drained and sliced
1/2 cup grated Parmesan cheese
Salt & Pepper to taste
1 cup Litehouse® Zesty Italian Vinaigrette or,
Litehouse® Tuscan Herb With Lemon or,
Litehouse® Sweet Onion with Dijon 

Directions

In large bowl combine tortellini, salami, provolone cheese, artichoke hearts and olives, with the dressing, mixing gently as the pasta is delicate and will break apart easliy. Top with parmesan cheese. Refrigerate one hour to blend flavors. Before serving, top with pimentos.

A delicious traditional salad topped with not so traditional blue cheese!

Ingredients

6 cups chopped iceberg lettuce
2 cups sliced cucumber
1 cup diced tomato
1 cup sliced celery
1 cup diced red bell pepper
1/2 cup diced carrot
1/2 cup thinly sliced green onion
2 Tbsp. Instantly Fresh Parsley
1 tsp Instantly Fresh Oregano
1 cup
Litehouse® Bleu Cheese Vinaigrette 
 

Directions

Combine all ingredients in a large bowl, then drizzle on top Litehouse Bleu Cheese Vinaigrette. Toss salad gently. Top with blue cheese crumbles.
