Cherry Pork Chops

Making good pork chops in the right sauce is an art, this recipe teaches you how to paint!

Ingredients

6 - Pork Chops
½ cup - Litehouse Cherry Vinaigrette dressing # 13257
1.5oz. - Dijon Mustard
Cooking Spray

Directions

Coat a large frying pan with cooking spray and place over medium-high heat.
Add pork chops to pan and brown on both sides, turning once approx. 5 minutes per side.
Combine Cherry Vinaigrette dressing and mustard and spoon over pork chops.  Reduce heat to medium-low, cover and cook for approx. 8 minutes more or until done.  Place chops on a serving platter and pour the Cherry Vinaigrette in a crisscross pattern over the top. 
Serve.

Southwestern Chicken Lasagna

This is an exciting twist on lasagna. It's a snap to put together because you don't have to cook the noodles separately. It freezes very well. Serve with extra salsa!

 

Ingredients

Sauce:
1/2 medium onion, chopped
1 28 oz. can whole tomatoes with juice
2 8 oz. tubs Litehouse® Salsa (2 cups)
1 pkg. taco seasoning mix
1 16 oz. can black beans, rinsed and drained
2 large egg whites
1 cup reduced-fat ricotta cheese
4 boneless-skinless chicken breast halves (1 pound) cooked and cut into 1 inch pieces
1 4 oz. can chopped green chilies
1 8 oz. pkg. reduced fat Monterey Jack cheese, shredded
1/2 pkg. lasagna noodles (approximately 10)

Directions

Preheat oven to 350F. In a food processor, chop the onion; add tomatoes with juice, salsa and taco seasoning. Pulse until the tomatoes are in small pieces, 3-4 times. Remove to a medium bowl and stir in the beans to make the sauce.
In a small bowl, mix the egg whites with the ricotta cheese; set aside.
Spread 1 cup of the sauce over the bottom of a 13" x 9" pan coated with nonstick cooking spray. Top with 5 noodles, overlapping slightly. Sprinkle with half the chicken, half the chilies, and 2 more cups of the sauce. Spoon out the ricotta cheese mixture and spread it out lightly. Top with half the shredded cheese, 5 more remaining noodles, and the remaining chicken, chilies, sauce and cheese.
Bake uncovered for 40 minutes or until the noodles are tender when pierced with a sharp knife. Cool at least 20 minutes before serving.

Tostada Pizza

Homemade pizza crusts will offer an extra element of ‘fresh’ in this spin on a traditional Mexican tostada.

 

Ingredients

2 cups bread flour, plus more for rolling
½ tsp sugar
1 1/8 tsp instant dry yeast
1 tsp kosher salt
¾ cups warm water
1 cup refried black beans
½ cup shredded cheddar cheese
1 cup shredded lettuce
2 tblsp Litehouse® Jalapeno Ranch
Litehouse® Instantly Fresh Cilantro
Litehouse® Instantly Fresh Jalapeños
Tortilla chips

 

Directions

In the bowl of your stand mixer, combine the flour, yeast, sugar and salt. While the mixer is running with the dough hook, add in the water and olive oil. Transfer the dough to a bowl drizzled in olive oil, cover and store in a cool, dry place for 1 hour. It should double in size.
 
Preheat the oven to 500◦F.  Place your pizza stone in the oven while it preheats.
 
Lightly flour a clean work surface and turn the dough out onto it. You can make 1 large pizza or 2 medium-sized pizzas. Roll the dough out to ½” thickness.
 
Place the dough on a baking sheet dusted with corn meal and slide it onto the pizza stone in your preheated oven. Cook for 4 minutes.
 
Remove the pizza crust from the oven with your baking sheet. Spread the refried beans evenly over the top of the crust. Sprinkle with the cheese and place the pizza back in the oven on the pizza stone for an additional 5 minutes.
 
Remove the pizza from the oven and dress with the lettuce, Litehouse Jalapeno Ranch and tortilla chips. Sprinkle the top of the pizza with Instantly Fresh Cilantro and Instantly Fresh Jalapenos to taste. Slice the pizza and serve with a side of salsa.

Greek Hamburgers

Combining the salty flavors of kalamata olives and feta cheese along with just a couple of Litehouse Instantly Fresh Herbs will create the perfect Mediterranean burgers.

 

Ingredients

1 pound ground beef
¼ cup Litehouse® Feta Cheese Crumbles 
¼ cup chopped kalamata olives
1 teaspoon Litehouse® Instantly Fresh Oregano 
1 tablespoon Litehouse® Instantly Fresh Red Onion 
4 hard rolls
Lettuce, tomato, red onion
Litehouse® OPA Feta Dill Dressing 

Directions

In a large bowl, combine the ground beef, feta, kalamata olives, oregano and onions. Gently mix the ingredients until they are just combined and then divide into 4 equal pieces.
Form the meat into 5 inch patties. Preheat your grill to medium-high heat and place each of the patties onto the grill. Cook each side for 3-4 minutes or until they have reached a degree of desired doneness.
Place one patty on each bottom half of a hard roll. Top the patties with lettuce, tomato and red onion. Drizzle the hamburgers with Litehouse OPA Feta Dill dressing and top with the other half of the bun.

Ground Turkey & Herb Stuffed Baby Peppers with Litehouse Opa Ranch

Ingredients

16 baby bell peppers
½ pound ground turkey
½ cup cheddar cheese, grated
3 tablespoons red onion, minced
2 cloves of garlic, minced
1 egg
1 cup tortilla chips, finely crushed
1 teaspoon salt
2 tablespoons Litehouse® Instantly Fresh Cilantro
1 cup Litehouse® OPA Ranch

Directions

Preheat oven to 400˚F.
Cut a thin slice from the stem end of each bell pepper to remove the top of each pepper.  Use your finger to remove the seeds and membranes.
In a medium bowl, combine the ground turkey, cheddar cheese, red onion, Litehouse freeze dried cilantro, garlic, egg, tortilla chips and salt. Use a rubber spatula to mix together until blended evenly.
Stuff each pepper with the turkey mixture and arrange on a sheet pan. Bake the peppers for approximately 45 minutes, until cooked through and well roasted.
Serve hot alongside a serving dish of Litehouse Opa Ranch Greek ranch yogurt for dipping.

Ranch Winter Panzanella with Chicken

Savor the earthy-sweet flavors of the roasted winter vegetables found in this hearty cool-season salad. Pieces of succulent chicken, homemade crispy croutons and creamy OPA Greek yogurt ranch dressing transform a basic “bread” side salad into a well-rounded meal.

Ingredients

½ loaf (about 8 ounces) day-old French, Sourdough or Rustic bread (cut into 1” cubes)
4 Tbsp olive oil (divided)
4 Tbsp Litehouse Food Instantly Fresh Italian Herb Blend (divided)
2 teaspoons coarse sea salt (divided)
1 10-oz package frozen cubed butternut squash
1 lb fresh baby Brussels sprouts (halved)
1 large red onion (peeled and cut into 1” chunks)
1 lb pre-cooked chicken breast (cut into large chunks)
1 cup packed fresh spinach leaves
½ cup Litehouse Food OPA Ranch Dressing

 

Directions

1.Preheat oven to 400 F.
2.Add bread cubes to large bowl. Drizzle with 2 tablespoons of the olive oil and sprinkle with 2 tablespoons of the Italian Herb Blend and 1 teaspoon of the salt.
3.Toss together to coat bread. Spread out on rimmed baking sheet and bake uncovered for 10 minutes, stirring once halfway through. Remove from oven to cool on paper towel. Keep oven heated.
4.In large bowl, add cubed squash (okay if still frozen), Brussels sprouts, and onion. Drizzle with remaining 2 tablespoons of olive oil and sprinkle with remaining 2 tablespoons Italian Herb Blend and remaining 1 teaspoon salt. Dust off crumbs from crouton baking sheet and spread out vegetable mixture in single layer. Roast uncovered in 400 F degree oven for 30 minutes, stirring gently halfway for even cooking.
5.Remove vegetables from oven and let cool down for approximately 15 minutes. Add prepared bread croutons, cubed chicken and spinach to pan; toss together. Transfer to serving platter and drizzle with Litehouse Food OPA Ranch Greek Yogurt Dressing or serve on the side. Best served warm or at room temperature.
*tip: frozen French bread is very easy to cube

Directions

1 large red onion, cut crosswise into about 12 rings,
Litehouse Tangy Orange Citrus Dressing,
10 cups baby spinach leaves, sprinkle of pepper, dash of salt,
1 tbsp toasted sesame seeds

Directions

Combine onion and 1/2 teaspoon of oil to coat the onions. Grill until browned and tender (about 9 minutes), turning occassionally. Place the spinach in a large bowl and sprinkle over the salt and pepper. Add the onions, then drizzle Litehouse Tangy Orange Citrus dressing over the spinach. Top with toasted sesame seeds.

Chicken Oriental Salad

This delicious salad uses one of our most requested dressings...Fat Free Sesame Ginger. The chicken tenders make a quick and satisfying addition.

Ingredients

10 oz. frozen, breaded chicken tenders (or 2 chicken breasts, cooked & sliced)
1 head (about 1 pound) green cabbage, shredded
1/2 head (about 1/2 pound) red cabbage, shredded
4 carrots, shredded (about 1 cup)
1 bunch romaine lettuce, shredded
2 oz. sliced almonds, toasted
1/4 cup sliced green onions
1 cup chow mein noodles (garnish)
1/2-3/4 bottle Litehouse® Sesame Ginger or Litehouse® Tangy Orange Citrus

Directions

Cook chicken tenders as package directs. Combine cabbage, carrots and romaine. Toss with dressing. For individual servings: Divide salad mixture among 4 large bowls. Top with almonds, chicken, green onions and chow mein noodles. Serve immediately with extra dressing, if desired. Note: To toast almonds: Heat oven to 350 F. Place almonds in single layer in shallow baking pan. Bake 7-8 minutes, stirring occasionally until light brown. Cool completely.

Jambalaya Salad

Ingredients

3/4 cup Litehouse® Jalapeño Ranch Dressing & Dip
1/2 cup celery-sliced
1/2 cup green pepper, chopped
1/4 cup onion, chopped
1 tsp. thyme
1 tsp. Litehouse® Freeze-Dried Garlic
2 cups rice, cooked
1/2 cup ham, cubed
6 oz. small shrimp, cooked
1 cup tomato, chopped
6 slices cooked bacon-crumbled

 

Directions

Combine first eight ingredients. Add remaining ingredients except bacon.
Chill and add bacon just before serving.
